Carlos is the founder and creative force behind 321 Empanadas. With years of experience in the culinary industry, he developed his skills working in a variety of roles—from dishwashing to line cook—in several high-end restaurants throughout New York City. These experiences helped shape his discipline, technique, and deep respect for quality ingredients.
Inspired by his Peruvian heritage and family traditions, Chef Carlos developed a passion for creating bold flavors and memorable dishes. His approach blends traditional influences with creativity, resulting in the distinctive style that defines 321 Empanadas today.
Together with his wife and business partner, Cindy T., Chef Carlos brought their vision to life in Melbourne, Florida, where they established 321 Empanadas as a local favorite. Their mission is simple: to craft high-quality baked empanadas using carefully selected ingredients and a unique fusion of flavors.
One of the highlights of their menu is their famous Green Sauce, made from a closely guarded family recipe that perfectly complements every empanada.
