Chef Carlos has an extensive background in the culinary industry, having worked in various roles from dishwashing to line cook at numerous high-end restaurants in New York City. With a deep passion for food and an appreciation for the nutritional value and taste of each dish, Chef Carlos incorporates his Peruvian heritage into every creation.
His love for the culinary arts developed at a young age, inspired by his family's own culinary talent. Currently, Chef Carlos, along with his wife and business partner Cindy T., is expanding the 321 Empanadas brand. Their philosophy revolves around using high-quality, hand-selected imported Peruvian and locally-sourced organic ingredients to create a unique and explosive flavor experience in every bite of their empanadas. They take pride in their Green Sauce and secret recipe, utilizing their expertise, experience, and attention to detail to produce a gourmet-style, healthy baked empanada. Their success has expanded from New York City to Melbourne, Florida, and beyond.
